The Coconut Crystal as seen in Donkey Kong 64

The Coconut Crystal is a rather common item that was first introduced in Donkey Kong 64. It's purpose is to allow the temporary function of the Power Barrel moves that are granted to each of the five playable Kongs. Once the Power Barrel move is activated, an inventory count of the current number of Coconut Crystals your Kong holds will show up and slowly dissipate over time for as long as the special power is in use.
Among many others, the Coconut Crystal item is a throwback to the Donkey Kong Country TV series, which premiered a couple years prior to Donkey Kong 64's release. Surprisingly enough, it is not nearly as important and centralized in the game's storyline as it is in this particular TV show. While Donkey Kong 64's Coconut Crystal is a simple side item needed to power certain character abilities, the TV series' "Crystal Coconut" is an extremely valuable and important item to the overall plot.
